Easy Antipasto Dinner


It's been so hot lately, so I haven't been in the mood much for cooking. But tonight, we had a really simple and satisfying meal ready in 20 minutes.

Broiled turkey meatballs...


Red potato salad tossed in pesto from Smitten Kitchen


and my favorite new creation-- a can of artichoke hearts, a can of diced tomatoes, chunks of mozzarella cheese, pepperoni, and basil broiled until it gets all hot and melty.
